Bijou means jewel in French and each little round of this Vermont goat cheese is indeed a jewel. Aged for just a moment Bijou reaches the store with just enough time on its development to have formed a thin delicate rind. At this stage the texture is creamy and the taste is of fresh milk with a bit of a green, herbal note. As it ages it gains assertiveness and complexity.
Ideal with a Gewurztraminer, Belgian ale and some dried fruit.
