Beecher’s sources milk from several local farms, but only makes the Reserve when the fat and protein in the milk achieve the perfect balance. Aged about a year, Flagship Reserve has a firm but creamy texture. The flavor is bright and fruity but offset by a nuttiness not usually found in cheddars. This is the result of a decision by Brad Sinko, lead cheesemaker, to add a bit of a culture normally found in European Alpine cheeses such as Gruyere.
