Durrus is a washed rind cows milk cheese made by Jeffa Gill on her farm in the Durrus Valley, Cork, Ireland. Using milk sourced from local farms, each wheel of cheese is gently washed daily in brine until it reaches its ripeness, which can be anywhere from 6 to 10 weeks. Strongly aromatic, the soft, fudgy paste is much tamer in flavor with notes of bacon, toasted almonds and spice.
