Coming from northwestern France near the Belgian border, Mimolette is a cow's milk cheese that is particularly distinctive because of its round shape and hard, bright orange paste.
Available as both a young cheese and aged up to 24 months, the younger version is seldom found in the U.S. Aged mimolette has flavors of caramel and butterscotch, though not as intense as an aged Gouda, and as it ages will develop a brothy verging on bacon flavor.
