With its name meaning 'beneath the ash', Sottocenere is indeed covered in ash to help preserve it. Not any ordinary ash though this ash has been blended with spices including cinnamon, clove, coriander, fennel and nutmeg; all lending their frangrances to this semi-soft cow's milk cheese from the Veneto region of Italy. The real treat lies beneath the ash where the paste of the cheese is liberally studded with black truffles!
Perfect with a glass of prosecco or cooked into a frittata. Try it in mashed potatoes for an elegant uptick in your side dish.
