From Nottinghamshire, by way of Neal's Yard Dairy, comes Stichelton. This one of a kind blue cheese is the result of an effort by cheesemaker Joe Schneider and Neal's Yard founder Randolph Hodgson to resurrect the original cheese that became Stilton. In short, while Stilton is a marvelous cheese, due to regulations it must be made with pasteurized milk to be called Stilton. Stichelton on the other hand is made with raw milk and has a much more nuanced taste featuring notes of green apple, toasted bread with a bit of blue spice. Perfect on one of our Sourdough English Muffins with a bit of honey.
