From the Val Taleggio high in the mountains of Lombardy comes the eponymous cheese. Washing in a brine solution for its forty days of aging produces a brick red rind which encloses a supple paste that is meaty and fruity. Pair with warm bread or a full red wine and the beefiness of Taleggio is brought out. In the other direction, fresh grapes, berries or a sweet wine bring the fruit notes to the forefront.
