Made with milk from only Reggiana cows (Vacche Rosa or Red Cow), Vacche Rossa Parm is aged for a minimum of 2 years compared to 12 months for the more common varieties. This extra aging produces a cheese that retains the tartness of Parmiggiano but is balanced by a sweeter component. Like all Parms, Vacche Rossa is virtually lactose free so it is ideal for those wanting to avoid lactose. Able to heighten any recipe Vacche Rossa is perfect on it's own with a glass of Barolo or Prosecco.
