Aptly monikered “cannonballs”, these little ball-shaped cheeses from Capriole Creamery in Indiana are power balls of goat-y flavor. Wabash is an aged goat cheese ripened under a cover of vegetable ash on the wrinkly rind. The flavor of this ash goat cheese is citrusy and bright, with a pleasant spiciness and tang, and the texture is dense and soft, getting dried and crumblier as it ages.
